My Mother loves her cast-iron dutch oven and would make a fruit cobbler for nearly any occasion she could think of. I love the mixture of sweet fruit with the cakey topping. This recipe calls for coconut milk to be poured over the top; studies are showing the coconut milk is packed with healthy fat and increases your metabolism. YUM!
Ingredients:
- 6 cups of Fresh Berries (of choice)
- 3 cups Almond Flour
- 2 Egg
- 4 Tbs. Coconut Oil or Vegetable Oil
- A drizzle of Maple Syrup
- Cinnamon to taste
- 1 can Coconut Milk (shake it well before opening)
Directions:
- Preheat oven to 350. Pour the berries into a pie pan.
- In a small bowl mix together the egg, almond flour, and coconut oil, and cinnamon. Stir well. The mixture will be really thick and clumpy.
- Drizzle a little maple syrup over your berries.
- Crumble the almond flour mixture on top of the blackberries and bake in oven for 35 minutes.
- Place in serving bowls, drizzle a little coconut milk over each cobbler, and enjoy. Everyone I feed this to is pleasantly surprised with how amazing the flavor is!
